I think it's just the angst factor that attracts people to this paring.
That a monster who should not feel anything or understand human emotions could come to feel something for Orihime.
That's my guess anyway.

IIRC they did get some chemistry near the end, with Ulquiorra showing some emotions... which, considering how little character development most Bleach characters get, makes him way above average anyway :P
